  1. 3 large eggs

  2. 6 tablespoons all-purpose flour

  3. 1 (10-ounce) package frozen, chopped spinach, thawed and "squeezed dry"

  4. 2 cups cottage cheese

  5. 2 cups Wisconsin cheddar cheese, shredded

  6. 1/2 teaspoon salt

  7. 1 dash cream of tartar

  8. 1 tablespoon minced onion

  1. Preheat oven to 350ºF (175ºC). Beat eggs with flour until smooth. Mix in remaining ingredients. Pour into well-buttered two-quart casserole. Bake uncovered for one hour.
