  1. 2 eggs

  2. 2 cups sugar

  3. 1/2 cup vegetable oil

  4. 1 teaspoon vanilla

  5. 2 cups flour

  6. 1/2 teaspoon salt

  7. 1 teaspoon baking soda

  8. 2 teaspoons cinnamon

  9. 1/4 teaspoon nutmeg

  10. 4 cups diced peeled apples

  11. 1 cup chopped walnuts

  12. Cream Cheese Frosting, below

  1. Beat eggs until light and fluffy. Gradually add sugar, oil andvanilla. Into a separate bowl, sift together flour, salt, baking soda, cinnamon and nutmeg; stir into first mixture. Stir in apples and walnuts. Putin greased 13x9x2-inch baking pan and bake at 350 for 45 minutes. Letcake cool in pan on a rack for 10 to 15 minutes. Spread apple cake with cream cheese frosting.

  2. Cream Cheese Frosting 1 pkg.(3 ounces) cream cheese, softened 3 tablespoons butter, softened Pinch of salt 1/2 teaspoon vanilla 1 1/2 cups confectioners' sugar Combine all ingredients in a mixing bowl; beat until smooth.
