  5. 1 cup applesauce

  6. 2 cups diced ham

  7. 1/2 teaspoon sage

  8. 1/4 teaspoon salt

  9. 1 cup seasoned bread crumbs

  10. 2 tablespoons butter -- melted

  1. Mix eggplant, onion and butter in a 3 quart casserole. Cover with plastic wrap. Microwave at high (100%) until onion is tender, 9 to 10 minutes, stirring once during cooking time. V Add applesauce, ham, sage and salt Combine bread crumbs and melted butter. Sprinkle over top. Microwave at high (100%) until eggplant is tender, 4 to 5 minutes. Makes 6 servings.
