  1. cup canola oil

  2. 1 cup cashew butter

  3. cup maple syrup

  4. teaspoon pure vanilla extract

  5. 1 cup whole wheat pastry flour

  6. teaspoon salt

  7. 300F and oil a baking sheet to bake cookies on. Mix together cashew butter and oil and blend until smooth. Stir in maple syrup and vanilla extract. Stir together flour and salt in a separate bowl. Add flour mixture to cashew butter mixture and mix until combined. Cover and refrigerate for 10 minutes. Roll dough into 3/4-inch balls. Place on baking sheet and flatten with a fork. Bake in preheated oven for 25 minutes. Edges should be lightly browned. Cool on a cooling rack.
