  2. 3 pound Chicken

  3. 1 Large onion

  4. 1 Teaspoon Salt

  5. 1 Teaspoon Ground chilies

  6. 1 Tablespoon Granulated sugar

  7. 1 cup Water

  8. 4 Cloves garlic

  9. 3 Tablespoon Vegetable oil

  10. 2 Tablespoon Minched lemon grass

  11. 4 Tablespoon Fish sauce(nuoc mam)

  12. 1 Tablespoon Caramel sauce

  1. Rinse chicken and dry well. Cut into small pieces. Peel garlic andslice finely. Cut onion into halves lengthwise and then cutlengthwise into 1/2 inch strips. Heat oil in large frying pan overmedium heat. Add a pinch of salt, garlic and onion. Fry over mediumheat until onion becomes translucent. Add lemon grass and chili.

  2. Fry 1 to 2 minutes until fragrant. Add chicken and cook until lightlybrowned. Add fish sauce, sugar and caramel sauce. Mix well. Add 1cup water and cook 45 minutes or until chicen is tender. Stiroccasionally and add more water if necessary. Makes 4 servings.

  3. CARAMEL SAUCE: Mix 1/2 c sugar with 4 tablespoons of water in heavysaucepan. Bring to a boil over medium heat and let boil until mixturechanges colour. Turn heat down to low and heat until brown. Add 1/2cup water to mixture. Stir until sugar is dissolved. Remove fromheat and store in a jar in the refrigerator.
