  5. 1 clove garlic -- crushed

  6. 1 red pepper -- seeded and cut into -- strips

  7. 1 397 gram can ratatouille -- (14oz)

  8. 1 227 gram can red kidney beans -- drained and rinsed

  9. -- (7oz) 1 227 gram can chopped tomatoes -- (7oz)

  10. 2 teaspoons pesto sauce

  11. 6 sundried tomatoes -- cut into pieces

  12. 1 tablespoon tomato ketchup

  13. salt and black pepper

  14. 8 black olives -- pitted and halved

  15. fresh basil -- shredded to garnish

  1. Heat the oil in a large pan. Add the garlic and sausage pieces, cook until browned.

  2. Add pepper and cook for 2-3 minutes.

  3. Add ratatouille, kidney beans, chopped tomatoes, pesto, sundried tomatoes, ketchup and seasoning.

  4. Simmer, uncovered, for 5 minutes.

  5. Stir in olives prior to serving and garnish with the shredded basilServe with tagliatelle or crusty bread and salad.
