  5. 2 Eggs, beaten

  6. 3/4 c Granulated sugar

  7. 1 tb Melted butter

  8. 2 1/2 c All-purpose flour

  9. 2 1/2 ts Baking powder

  10. 1/2 ts Salt

  11. 1/4 ts Ground nutmeg

  12. 1 c Dates, chopped

  13. 1 c Milk

  14. 1 ts Lemon extract

  15. 3 to 4 dozen doughnuts

  16. Vegetable oil or shortening for deep-frying

  17. In a bowl, combine beaten eggs, sugar and melted butter; beat well. In

  18. another bowl, combine flour with baking powder, salt and nutmeg. Fold

  19. in dates. Add dry ingredients to egg mixture alternately with milk

  20. and lemon extract.

  21. Heat oil in deep-fat fryer to 375 deg F. Drop batter by

  22. tablespoonfuls, 2 or 3 at a time, into hot oil and fry until crisp

  23. and brown, about 3 minutes frying time, turning once. Drain on paper

  24. towels.
