  3. 1 ounce chile de arbol, dried and roasted, -- to add some heat

  4. 6 tablespoons cumin seeds -- toasted and ground

  5. 6 tablespoons garlic, granulated, freshly purchased

  6. 4 tablespoons oregano, ground, preferably Mexican type

  7. 4 tablespoons hot Hungarian paprika
