  1. 4 lamb chops

  2. 2 medium size desiree potatoes, peeled, sliced

  3. 1 tablespoon rosemary leaves, roughly chopped

  4. 2 teaspoon dried oregano

  5. 2 medium zucchini, sliced

  6. 1cm thick

  7. cup extra virgin olive oil

  8. freshly ground pepper

  9. 100g feta or haloumi cheese

  10. green salad and crusty bread, to serve

  1. Preheat oven to 200C.

  2. Place lamb, potatoes, rosemary, oregano, zucchini, oil and pepper in a large flat baking dish. Take care with the salt as the cheese will be quite salty.

  3. Cook in preheated oven for 15 minutes. Check meat and vegetables and turn to brown evenly. Scatter cheese over the top and return to oven for another 15 minutes until vegetables are tender and lamb is cooked as desired. The top should be nicely browned.

  4. Serve with a green salad and crusty bread.
