  1. 4 skate wings, filleted and skinned

  2. 1 cup flour (250 ml)

  3. 4 eggs, beaten

  4. 2 cups bread crumbs (500 ml)

  5. 2 tablespoons canola oil (30 ml)

  6. Salt and pepper

  7. 1 lemon, cut in wedges, for garnish

  8. Lemon cut in wedges

  1. Coat the skate with flour, eggs, and breadcrumbs.

  2. In a skillet, heat the oil on medium high heat and pan fry the skate for 2 minutes on each side. Season with salt and pepper.

  3. For the serving: Serve it with a dollop of Chuck’s tzatziki (see the link for the recipe), a lemon wedge and the roast beets and red chard greens (see the link for the recipe).
