  1. 500 g chicken fillets,

  2. 1 onion,

  3. 1 teaspoon crushed 1 teaspoon crushed fresh 2 tablespoons 2 tablespoons sweet chili Sprinkle of cloves, paprika and tablespoon curry powder, or to

  4. 1 x 500 mL can coconut

  5. 1 small banana,

  6. 1 apple, peeled and Light sour cream or carnation

  7. 1 cup cauliflower florets, chopped

  1. Saute onion, garlic and ginger in the butter in a large frying pan.

  2. Add chilli sauce, spices, curry, banana, apple, coconut milk and a little salt.

  3. Combine well, cover and simmer over low heat for 20 minutes.

  4. Remove lid, add the diced chicken and cauliflower if desired.

  5. Simmer slowly, stirring occasionally for 25 minutes or until meat is cooked.

  6. Add desired amount of sour cream or carnation milk, and adjust flavour with salt if necessary just before serving.

  7. Serve with rice.
