  1. 2 Mozzarella cheese balls

  2. 1 Orange sweet pepper

  3. 2 Shallots (sliced)

  4. 1 Cup cucumber (diced)

  5. 1 Cup new potatoes (boiled)

  6. 1 Table spoon chopped parsley

  7. 1 Table spoons olive oil

  8. 1 Medium carrot (sliced)

  9. 1 tsp fresh dill (chopped)

  10. 2 tomatoes (sliced)

  11. 5 Free range eggs Salt and pepper

  1. Stir fry sliced onion and carrots with olive oil for 1 minute. Add finely diced sweet pepper and chopped boiled potatoes. Season with salt and pepper. Add chopped cucumber and dill. Stir for 2 minute on medium heat. Pour beaten eggs in the pan. Add sliced tomato and mozzarella and cook on low heat for 1 minute. Put under the grill for 5 minutes. Serve with chopped parsley. Do not worry about the juices from mozzarella. With a kitchen towel, clean excess juice if you prefer. Adding carrot, potato, sweet pepper, cucumber and onion to this omelette recipe is a good way to incorporate your 5 a day all in one meal.
