  1. 1 apple, peeled, cored, chopped

  2. 1 onion, chopped

  3. 1 Tbsp. butter

  4. 1 Tbsp. olive oil

  5. 1 Tbsp. curry powder

  6. 10 oz. can condensed cream of chicken soup

  7. 1 cup heavy cream

  8. 1/2 tsp. salt

  9. 1/8 tsp. pepper

  10. 8 boneness, skinless chicken thighs, cut into 1" pieces

  11. 3/4 cup sliced mushrooms

  12. 1 tsp. smoked paprika

  1. In heavy skillet, cook apple and onion in butter and olive oil until tender, 4-5 minutes. Stir in curry powder and simmer for another 2-3 minutes. Add soup, cream, salt and pepper and stir. Bring to a simmer. Add chicken to pan along with mushrooms and paprika. Bring to a simmer and cook for 20-30 minutes, stirring occasionally, until chicken is thoroughly cooked. Serve over hot cooked rice.
