  1. 4 Onions - chopped (large)

  2. 3 tablespoons 45ml Vegetable oil - for sauteing

  3. 1 Tomato puree

  4. 3 Tomatoes - with juice

  5. 2 1/2 cups 592ml White vinegar

  6. 4 tablespoons 60ml Packed dark brown sugar

  7. 4 tablespoons 60ml Granulated sugar

  8. 2 tablespoons 30ml Salt

  9. 2 tablespoons 30ml Freshly cracked black pepper

  10. 2 tablespoons 30ml Paprika

  11. 2 tablespoons 30ml Chili powder

  12. 4 tablespoons 60ml Molasses

  13. 1 cup 237ml Orange juice

  14. 2 tablespoons 30ml Liquid smoke

  15. 8 tablespoons 120ml Brown mustard - Dijon-style

  1. Recipe Instructions In a large, heavy-bottomed saucepan, saute the onion in the oil over medium-high heat until golden brown, about 7 to 10 minutes. Add all the remaining ingredients, bring to a boil, then reduce the heat and simmer uncovered at the lowest possible heat for 4 hours. (This long cooking removes as much acidity as possible from the tomatoes.) Puree sauce in 2, 3, or more batches to prevent it from spilling out of your food processor or blender. Will keep 2 weeks, covered, in the refrigerator.
