  1. 1/2 cup 118ml Vegetable oil

  2. 3 tablespoons 45ml White wine vinegar

  3. 1 tablespoon 15ml Minced shallot

  4. 1/4 cup 4g / 0.1oz Chopped fresh cilantro

  5. 1/4 teaspoon 1 1/3ml Ground cumin Salt - to taste Freshly-ground black pepper - to taste

  6. 1 Jicama - peeled, julienned (small)

  7. 1 Red bell pepper - stemmed, seeded, and julienned

  8. 1 cup 237ml Cubed fresh pineapple

  9. 1/2 cup 8g / 1/3oz Fresh cilantro leaves

  1. Recipe Instructions Whisk first 5 ingredients in small bowl to blend. Season to taste with salt and pepper. Combine jicama, red bell pepper, pineapple and cilantro leaves in large bowl. Add dressing and toss to coat. This recipe yields 4 servings.
