  1. 12 pieces halloumi cheese

  2. 3 tbsp jerk seasoning olive oil

  3. 1 red onion

  4. 1 heads celery

  5. 2 carrots

  6. 1 red bird's eye chilli

  7. 1 tbsp coriander leaves , chopped

  8. 25 g peanuts , toasted

  9. 1 handfuls bean sprouts

  10. 1 lime , juice only

  11. 3 tbsp mayonnaise salt and black pepper , to taste

  1. Method 1. Toss the halloumi cheese in jerk spices, then brush with oil and barbecue for 2 minutes on each side.

  2. For the coleslaw, finely slice the onion, celery, carrot and chilli. Combine them with the lime and mayonnaise and toss together with the remaining ingredients.

  3. Serve the grilled halloumi with a generous helping of coleslaw.
