  7. 1 Large Lemon

  8. 3/4 Cup Butter Or Margarine

  9. 1 Cup Sugar

  10. 3 Eggs

  11. 1 tablespoon peel and squeeze

  12. 3 tablespoons

  13. juice.

  14. In double boiler over hot, not boiling, water, or in heavy

  15. 2-quart saucepan over low heat, stir lemon juice, lemon peel,

  16. butter or margarine, and sugar until butter melts.

  17. In small bowl, beat eggs slightly. <- Do not skip this step.

  18. Add eggs to butter mixture and cook, stirring constantly,

  19. until mixture is very thick and coats the back of a spoon

  20. well, about 15 minutes (do not boil or mixture will curdle).

  21. Refrigerate.
