  1. 1 gallon water

  2. 1 Cup salt

  3. 1/2 Cup granulated sugar

  4. 1/2 bunch thyme

  5. 3-4 springs rosemary

  6. 3 lemons, juice and rind

  1. Place your poultry in a large nonreactive container (i.e. plastic, stainless steel).

  2. Add cold water, salt, sugar, herbs, and lemon to brining container.

  3. With a spoon agitate brining liquid to dissolve salt and sugar.

  4. Refrigerate overnight.
