  1. Artichokes with Creamy Cucumber Sauce

  2. Makes 4 servings

  3. 1/2 cup diced cucumber

  4. 1/3 cup reduced-calorie mayonnaise

  5. 1/4 cup chopped parsley

  6. Celery powder to taste

  7. Ground white pepper

  8. 2 tablespoons butter

  9. 4 artichokes, trimmed, steamed until tender

  10. In food processor fitted with steel blade or blender container,

  11. combine cucumber, mayonnaise, parsley, celery powder and pepper to

  12. taste. Process or blend until smooth. Add butter; process or blend

  13. well. Serve as dipping sauce with artichokes.
