  11. : Mix and chill

  12. : 1 lb peaches, pitted and sliced

  13. : 3 tb granulated sugar

  14. : 1 tb lemon juice

  15. : WHIPPED CREAM

  16. : 1 c heavy whipping cream

  17. 1/2 c powdered sugar

  18. 1/2 ts almond extract

  19. : CARAMEL SAUCE

  20. : 2 tb butter

  21. 3/4 c granulated sugar

  22. 1/2 ts vanilla

  23. 1/2 c heavy whipping cream

  24. Crust: sheet Pepperidge Farms Puffed Pastry Sheets Defrost and place

  25. 912 inches Cut into rectangles, each measuring 36 inches Place on oiled baking sheet

  26. Pierce all pieces with a fork Brush each pastry with 1/2 tsp. of milk

  27. 350 for 25 minutes

  28. WHIPPED CREAM:

  29. Whip ingredients together until nearly double in volume and soft peaks

  30. form. Keep chilled until ready to assemble.

  31. CARAMEL SAUCE: Combine all in a small, heavy saucepan and cook on

  32. high heat until sugar melts and mixture begins to bubble at the

  33. edges. REMOVE IMMEDIATELY. Whisk in very slowly whipping cream. Allow

  34. to cool.

  35. TO ASSEMBLE:

  36. With a sharp knife, carefully split each pastry into 2 layers. Place

  37. one layer on a plate, spoon some of the whipped cream mixture on top.

  38. Place second pastry layer over peaches. Dust with powdered sugar and serve. Repeat with remaining pastries.

  39. Notes: - I remove the skin from the peaches

  40. : - It may take some practice to get the caramel sauce just

  41. right, but the results of a perfected caramelizing technique produces

  42. a first-rate flavor. Walt MM
