  2. VERMICELLI WITH NO-COOK TOMATO SAUCE

  7. 2 Eggs

  8. 1/2 c Oil-pk sun-dried tomatoes

  9. -slivered

  10. 1/4 c Olive oil from tomatoes -- or -1/2 c

  11. 1/2 c Parmesan -- fresh grated

  12. 1/2 c Parsley -- chopped

  13. 2 cl Garlic -- minced

  14. 1 tb Lemon juice

  15. 8 oz Vermicelli or thin spaghetti

  16. -cooked al dente

  17. Salt and pepper

  18. In a serving bowl, whisk together the eggs, tomatoes,

  19. oil, cheese, parsley, garlic and lemon juice. While

  20. the pasta is still hot, add to the egg mixture. Toss

  21. well to coat the pasta with the sauce. Season with

  22. salt and pepper. Serve hot. Source: Sun-Dried
