  2. GARBANZO STEW

  7. 4 c Vegetable stock

  8. 1 c Dried garbanzo beans

  9. -- soaked overnight

  10. 1 c Diced onion

  11. 1 c Diced tomatoes

  12. 1 tb Minced fresh ginger

  13. 2 ts Ground coriander

  14. 1 t Minced garlic

  15. 1/4 ts Ground cumin

  16. Freshly ground black pepper

  17. 1 t Fresh lime juice

  18. 1 tb Chopped fresh parsley

  19. In a large saucepan, combine the stock and garbanzo

  20. beans. Bring to a boil, reduce the heat, and simmer,

  21. covered, for 1 hour, or until just tender. Drain,

  22. reserving 1 cup of the cooking liquid.

  23. In a large saucepan, combine the cooked garbanzos,

  24. reserved liquid, onion, tomato, ginger, coriander,

  25. garlic and cumin. Bring to a boil. Reduce the heat

  26. and simmer, covered, for 20 minutes.

  27. Season to taste with freshly ground black pepper.

  28. Garnish with the lime juice and chopped parsley.
