  1. 1kg baby chat potatoes, halved

  2. 2 teaspoons Dijon mustard

  3. 2 tablespoons olive oil

  4. 3/4 cup marinated artichoke hearts, drained (oil reserved), halved

  5. 2 tablespoons salted baby capers, rinsed and drained salt and cracked black pepper

  6. 75g baby rocket

  1. Method Steam or boil the potatoes until just tender and set aside to cool slightly. Meanwhile, place the mustard, olive oil and 1 tablespoon of the reserved artichoke oil in a small bowl and whisk to combine. Add the capers, artichokes, salt and pepper to the potatoes and gently combine. Drizzle with the dressing, add the rocket leaves and toss to combine. Serve potato salad with the turkey.
