  1. Ingredients :

  2. 1/2 Kg Pumpkin flesh

  3. 3 tsp Olive oil

  4. 2 tsp Balsamic vinegar

  5. 1/2 tsp Fresh ginger (crushed)

  6. 1/2 tsp Turmeric

  7. 10 Fresh mint leaves

  8. 1 Medium hot chili (de-seeded)

  9. 1/2 Lemon (juice)

  10. Salt and pepper

  11. Peel pumpkin,

  12. remove seeds

  13. and cut into small cubes. Boil pumpkin with 1/2 L water for about 5 minutes.

  14. Season with sea salt and black pepper.

  15. Blend pumpkin pieces with its water,

  16. adding balsamic vinegar, olive

  17. oil, crushed ginger, chili, turmeric and juice of half of lemon.

  18. Take back to the heat and allow to

  19. simmer gently

  20. for 5 minutes.

  21. Serve with chopped mint leaves in

  22. carved pumpkin

  23. bowl.
