  1. Pesto Dressing:

  2. 1/4 cup extra-virgin olive oil

  3. 3 tablespoons red wine vinegar

  4. 2 tablespoons homemade or store-bought pesto

  5. Salad:

  6. 1 pound of sweet onions, thinly sliced

  7. 1 large (about 3/4 pound) firm, ripe tomato, cored and cut crosswise into 1/4-inch thick slices

  8. Fresh basil sprigs, optional

  9. Salt and freshly ground black pepper to taste

  1. Prepare the dressing: In a small bowl, whisk together theolive oil, vinegar, and pesto; set aside.

  2. Prepare salad: Separate the onion rings and place in a bowl. Pour the dressing over the onions and mix gently.

  3. On 4 salad plates, arrange equal portions of the tomato. Top with equal portions of the onions and dressing. Garnish with basil sprigs, if desired. Season with salt and pepper.
