  1. Ambrosia Cookies Yield: 4 dozen

  2. 1 cup butter or margarine

  3. 1 cup sugar

  4. 1 cup firmly packed brown sugar

  5. 2 eggs, well beaten

  6. 1 teaspoon vanilla extract

  7. 2 cups all-purpose flour

  8. 1 teaspoon baking powder

  9. 1/2 teaspoon baking soda

  10. 1/4 teaspoon salt

  11. 1 cup flaked coconut

  12. 1 1/2 cups quick-cooking or regular oats, uncooked

  13. 1 cup chopped pecans

  14. 2 cups chopped dates (or raisins)

  15. 1 tablespoon grated lemon rind

  16. 1 teaspoon grated orange rind

  17. Cream butter in a large mixing bowl; gradually add sugar, beating

  18. well. Add eggs, beating well; stir in vanilla.

  19. Combine flour, baking powder, baking soda, salt, coconut, oats,

  20. pecans, dates, lemon rind, and orange rind in a medium mixing bowl;

  21. mix well. Add to creamed mixture; blend well. Drop dough by

  22. teasoonfuls 2 inches apart onto ungreased cookie sheets. Bake at

  23. 375 F for 10 to 12 minutes. Remove to wire racks to cool. Store

  24. in airtight containers.
