  1. 1/4c Vegetable oil

  2. 6 c Broccoli florets

  3. 2 c Onions, sliced

  4. 2 Garlic cloves, minced

  5. 1/4ts Salt

  6. 1/4ts Crushed red pepper

  7. 14 oz Chicken broth

  8. 1 lb Thin spaghetti or vermicelli

  9. 3/4c Walnuts, roasted, chopped

  10. 1/3c Parmesan cheese

  1. + Directions : In large skillet or wok, heat oil. Add broccoli, onion, garlic, salt and red pepper; cook, stirring constantly, 5 minutes or until vegetables are crisp-tender. Add broth; cook 3 minutes. Meanwhile, cook pasta according to package directions; drain. Toss hot pasta with broccoli mixture and walnuts. Toss with cheese. * TO ROAST WALNUTS: Conventional: In 350 deg oven, spread walnuts in a shallow baking pan; bake 8-10 minutes, stirring occasionally, until golden. Microwave: Spread walnuts on glass plate. Microwave on 100% 5-8 minutes until golden, stirring after each minute.
