  1. Potato Wedges

  2. Serves 4. 4 large potatoes (Desiree, Sebago, Coliban or Russet) slightly older

  3. potatoes make better chips enough water to cover the potatoes

  4. Plain flour, seasoned with a pinch of salt

  5. Vegetable or light olive oil for frying

  6. Wash the potatoes well and put them whole into a saucepan with

  7. enough water to completely cover them. Bring to the boil and reduce

  8. the heat to allow the potatoes to simmer until just cooked. Test

  9. by inserting a skewer into the biggest potato. If it slides straight

  10. off, the potatoes are cooked. Remove from the water immediately

  11. and let them cool for about 3 minutes in a strainer. Cut the potatoes

  12. into chunky wedges - about 4 or 6 per potato, then dust lightly in

  13. the flour.

  14. Heat the oil in a deep saucepan over a medium heat. You can test

  15. the oil by dipping the handle of a wooden spoon into it. If the

  16. oil bubbles around the handle the oil is ready. If you have a

  17. cooking thermometer handy, the oil should be about 180 C.

  18. Lower the wedges into the oil and fry for about 2 minutes, or until

  19. golden brown. Don't overcrowd the pan.

  20. Remove the wedges from the oil and drain onto kitchen paper, such

  21. as paper towels. Dust the hot wedges with the spice mix and serve

  22. with the sour cream dip.

  23. For really crispy potato wedges refry the wedges before coating

  24. them with the spice mix.

  25. Spice Mix

  26. 1 teaspoon paprika

  27. 1 teaspoon ground cumin

  28. 1/4 teaspoon ground chilli powder

  29. 1/2 teaspoon salt

  30. 1/4 teaspoon black pepper

  31. Mix the ingredients well in a small bowl ready to sprinkle over

  32. your hot potato wedges.

  33. Light Sour Cream Dip

  34. 150 grams light sour cream (full-fat can be used if desired)

  35. 1/2 lime or lemon, juiced

  36. 1/4 bunch chives, finely chopped

  37. Salt and pepper to taste.

  38. Mix all the ingredients together and serve in a small bowl.
