  1. Red Bean Chili

  2. 1 pound lean ground beef

  3. 1 large onion, chopped

  4. 16 oz dried small red beans, rinsed, drained, and picked over

  5. 16 oz jar roasted red peppers, rinsed, drained, and coarsely chopped

  6. 18 oz can diced peeled tomatoes

  7. 15 oz can tomato sauce

  8. 3 to 4 tablespoons Nex Mexico chili powder

  9. 1 1/2 tablespoons ground cumin

  10. 1 teaspoon garlic powder

  11. Shredded Monterey Jack or Cheddar cheese

  12. chopped onions

  13. chopped tomatoes

  14. sour cream

  15. In a large skillet, cook the beef and onion over medium-high heat,

  16. 6 to 8 minutes. Drain off any

  17. fat. Turn into a 5-quart electric slow cooker. Add the beans, red

  18. peppers, tomatoes with their liquid, tomato sauce, chili powder,

  19. cumin, and garlic powder. Mix well.

  20. 9 to 10 hours, or until the

  21. beans are tender. Serve topped with cheese, onions, tomatoes, and sour cream, as desired.
