  1. 3 large potatoes, peeled and cubed

  2. 3 eggs

  3. 2 rashers bacon, sliced

  4. 3 spring onions, finely sliced

  5. 250ml soured cream

  6. butter for frying

  1. Cook potatoes in boiling water until soft (but not mushy), drain.

  2. Meanwhile, boil eggs for 15-20 minutes. Cool under running tap, then peel and slice.

  3. Heat some butter in a large frying pan. Fry bacon until nearly crispy.

  4. In a large bowl, toss potatoes, eggs, bacon and spring onions together. Stir in soured cream and mix well. Serve either warm or cold.
