  1. 8 cup low sodium vegetable broth

  2. 8 mushrooms, shiitake, dried

  3. 1 cup chopped leeks, finely (white parts only)

  4. 2 tsp fresh ginger root, grated

  5. 2 tsp rice vinegar

  6. 2 tsp low sodium soy sauce

  7. 1 tbsp mirin (optional )

  8. 3 oz pasta, soba, dry

  9. 2 cup fresh chopped spinach, washed and stemmed

  10. 1 tbsp miso

  11. 1 tbsp scallions, chopped

  12. 1 tsp sesame seeds

  1. In a soup pot, bring the vegetable stock to a boil. Add the shiitake, leeks, ginger, vinegar, soy sauce, and mirin, if using. Cover and simmer until the leeks are tender, about 10 minutes.
