  1. 1/3 cup 20g / 0.7oz Yellow cornmeal

  2. 1/4 cup 36g / 1 1/3oz Parmesan cheese - grated

  3. 1 tablespoon 15ml All-purpose flour

  4. 1 teaspoon 5ml Dried leaf basil - crumbled

  5. 1 teaspoon 5ml Salt

  6. 1/8 teaspoon 0.6ml Ground red hot pepper

  7. 1 Egg

  8. 4 Catfish fillets - (4 oz ea)

  9. 1 tablespoon 15ml Vegetable oil

  1. Recipe Instructions 1. Combine cornmeal, cheese, flour, basil, salt and red pepper in shallow dish. Beat egg in small bowl. Dip fillets in egg, then dredge in cornmeal mixture.

  2. Heat oil in large nonstick skillet over medium heat. Working in batches if necessary, place fish in skillet; cook 4 minutes on each side until cooked through.
