  2. SHRIMP AND PORK W/ CELLOPHANE NOODLES

  6. 1/2 lb Shrimp, medium, (24-30/lb)

  7. - wash, shell, devein

  8. - dice 1/4 lb Pork, lean -- slice

  9. 1 Onions -- coarsely chopped

  10. 1 tb Sherry

  11. 1 tb Dark soy

  12. 1 d Pepper

  13. 2 tb Oil -- for stir frying

  14. 6 Dried black mushrooms

  15. - soak in hot water 20 Min.

  16. -drain -- save 1 c soak liquid

  17. -rinse, discard stems, slice

  18. 6 oz Cellophane noodles

  19. - soak in hot water 10 Min.

  20. - then in cold water 30 Min.

  21. 8 c Boiling water

  22. Preparation: - To 8 c of boiling water, add the "soaked" cellophane

  23. noodles. Bring water to boil again. Drain & rinse noodles and cut to

  24. shorten.

  25. - Heat Wok - Add oil and let heat

  26. - Add onion; stir fry until translucent

  27. - Add pork; stir fry until loses pinkness

  28. 2-3 Min.

  29. - Add shrimp; stir until pinkish

  30. - Add sherry; stir quickly until evaporates

  31. - Sprinkle w/ soy & pepper

  32. - Add mushrooms; stir fry

  33. 2 Min.

  34. - Add saved mushroom "soak liquid"; stir in gently

  35. - Add noodles; stir in gently
