  6. 1 c Sugar

  7. 2/3 c Pumpkin

  8. 1 ts Lemon juice

  9. 3/4 c Flour

  10. 1/2 ts Nutmeg

  11. 1 ts Ginger

  12. 2 ts Cinnamon

  13. 1 ts Baking powder

  14. 1/2 ts Salt

  15. 1 c Powdered sugar

  16. 6 oz Cream cheese

  17. 4 ts Butter or margarine

  18. 1/2 ts Vanilla extract

  19. 3 eggs at high speed for 5 minutes. Gradually, add

  20. 1 cup sugar. Stir

  21. 2/3 cup pumpkin and 1 tsp. lemon juice. Mix the next

  22. 6 ingredients and fold into pumpkin mixture. Pour into a greased and floured cake pan. Top

  23. 375 degrees for 15 minutes. After baked,

  24. sprinkle a towel with powdered sugar. Tip cake out onto the towel. Sprinkle

  25. the cake with powdered sugar. Roll up in the towel and let cool. Topping:

  26. Place powdered sugar, cream cheese, butter and vanilla extract in mixing

  27. bowl. Beat until smooth. Unroll cake, gently, and spread withcream cheese

  28. mixture. Roll cake again. Chill. --
