  1. 4 tablespoons 60ml Potatoes - cut crosswise (medium) Into 1/2" thick slices

  2. 3 Carrots - cut 1/4" diagonally (large)

  3. 1/3 cup 78ml Olive oil

  4. 1 tablespoon 15ml Fresh lime juice

  5. 2 tablespoons 30ml Finely-grated onion

  6. 1/2 teaspoon 2 1/2ml Ground cumin

  7. 1/2 teaspoon 2 1/2ml Salt

  8. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  9. 2 teaspoons 10ml Zucchini - cut 3/4" diagonally (large)

  1. Recipe Instructions Bring a medium saucepan of water to a boil. Add the potatoes and carrots and parboil over high heat for 10 minutes. Drain and set aside. Light the grill. In a large bowl, combine the olive oil, lime juice, onion, cumin, salt and pepper. Add the potatoes, carrot and zucchini slices and toss to coat. Let stand for up to 15 minutes. Grill the vegetables for about 3 minutes per side, turning once, until nicely browned and tender. Serve hot. This recipe yields 4 servings.
