  1. 1 cup old-fashioned oats

  2. 1 cup whole wheat flour

  3. 3/4 cup packed brown sugar

  4. 1/2 cup all-purpose flour

  5. 2 teaspoons baking powder

  6. 1/2 teaspoon salt

  7. 2 eggs

  8. 3/4 cup 2% milk

  9. 1/4 cup canola oil

  10. 1 teaspoon vanilla extract

  1. In a small bowl, combine the first six ingredients. In another small bowl, beat the eggs, milk, oil and vanilla. Stir into the dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 15-17 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 1 dozen.
