  3. 3/4 cup of raspberry juice and pulp

  4. 1 teaspoon of granulated gelatine

  5. 1/3 cup of sugar

  6. 3 tablespoons of cold water

  7. 3/4 cup of double cream

  1. Soften the gelatine in the cold water and dissolve by setting the dish in boiling water; add to the raspberry pulp and juice (fresh or canned berries pressed through a sieve) with the sugar.

  2. Set the dish into ice-water and stir constantly until the mixture begins to thicken; then fold in the cream, beaten firm.

  3. Turn into cups lines with ladyfingers.
