  3. 1 cup 237ml Green pepper - seeded, and (small) Coarsely chopped

  6. 2 small regular cucumbers, seeded

  7. 2 Green onions - coarsely chopped, Ends thinly sliced and reserved for Garnish

  8. 2 tablespoons 30ml White vinegar

  9. 1/2 teaspoon 2 1/2ml Tabasco sauce

  10. 1/2 Sugar substitute

  11. 1/4 cup 59ml Extra-virgin olive oil

  12. 4 cups 948ml Ice water Salt - to taste Freshly-ground black pepper - to taste

  1. Recipe Instructions Place bread in a bowl; cover with water and soak 5 minutes, until softened. Squeeze excess water from bread and place bread in a food processor or blender. Add almonds, pepper, cucumber and green onions, process in pulses until fairly smooth. Add vinegar, Tabasco, sugar substitute and olive oil. Process until smooth. Slowly add ice water; process in pulses until smooth. Pour into a pitcher or bowl. Season to taste with salt and pepper. Chill 1 hour for flavors to blend. This recipe yields 4 servings.
