  1. 1 boneless beef chuck eye roast (2lb.)

  2. 1 jar (16 oz.) roasted peppers /undrained

  3. 1 bottle zesty Italian dressing

  4. 1/2 cup grated parmesan cheese

  5. 1 loaf French bread (24inch) cut this into 8 pieces,partially split

  1. Drain peppers/reserving 1/4 cup liquid Place meat in crockpot top with peppers,reserved liquid and dressing.

  2. Cover with lid Cook on low 6-8 hours(or on high 4-6 hours)

  3. Remove the meat from crockpot,reserving peppers and 1 1/2 cups of liquid in crockpot.

  4. DISCARD EXCESS LIQUID Shed meat with 2 forks;

  5. return to crockpot;

  6. Stir in cheese.

  7. Pile onto bread slices.
