  1. 4 Tbls. oil

  2. 4 C. chopped onion salt/ cayenne pepper to taste

  3. 2 lbs. stew meat

  4. 2 Tbls. chili powder

  5. 4 tsp. cumin chrushed red pepper flakes to taste

  6. 4 tsp. dried oregano

  7. 6 C. crushed tomato es

  8. 1/2 C. tomato paste

  9. 4 C. beef stock

  10. 2 C. canned red kidney beans

  11. 4 Tbls. masa ( corn ) flour

  12. 8 Tbls. water tortilla chips monterey jack cheese green onion s sour cream

  1. Saute onions in oil and season with salt and cayenne pepper to taste. Add beef and brown, cooking about 6 minutes. Add tomatoes, tomato paste, beef broth, kidney beans, oregano, chili powder, cumin and red peper flakes. Mix together and bring to a boil. Reduce heat to low and simmer 1 hour. Mix masa flour and water together to make a slurry. Add slurry to the chili and simmer 30 more minutes. Serve over tortilla chips, topped with monterey jack cheese, green onions, and sour cream. (may use ground beef in place of stew meat)
