  1. 1/4 cup pitted dried cherries

  2. 3 tablespoons firmly packed brown sugar -- divided

  3. 1/2 teaspoon ground cinnamon

  4. 1/4 teaspoon grated lemon rind

  5. 1 tablespoon bourbon

  6. 2 large unpeeled cooking apples

  7. 1/2 cup boiling water

  1. Preparation : Combine cherries, 2 tablespoons brown sugar, cinnamon, lemon rind, and bourbon in a small bowl; stir well, and set aside. Core apples three-fourths of the way through. (Do not cut through bottom). Peel top third of each apple. Place in a baking dish. Fill centers of apples with cherry mixture. Sprinkle the remaining 1 tablespoon brown sugar in bottom of dish. Pour boiling water into baking dish. Bake at 400 degrees for 45 minutes or until tender, basting apples once with syrup from pan. Serving Ideas : To serve, drizzle with remaining syrup.
