  1. 1 pound ground pork sausage

  2. 1 tablespoon butter

  3. 1 bunch green onion s, chopped

  4. 1/2 pound fresh mushroom s, sliced

  5. 12 egg s, beaten

  6. 1 (16 ounce) container cottage cheese

  7. 1 pound Monterey Jack cheese, shredded (I use part pepper jack cheese)

  8. 1 (4 ounce) can diced fire roasted green chile s

  9. 1 cup all-purpose flour

  10. 1 teaspoon baking powder

  11. 1/2 teaspoon salt

  12. 1/3 cup butter , melted

  1. Brown sausage in a large, deep skillet. Drain, and set aside. Melt butter in skillet, and cook and stir the green onions and mushrooms until tender.

  2. Beat the eggs with a mixer and gradually add the flour, baking powder and salt. Stir in the melted butter.

  3. In a large bowl, mix the egg mixture, cottage cheese, Monterey Jack cheese, and chiles. Stir in the sausage, green onions, and mushrooms.

  4. Preheat oven to 350 degrees. Lightly grease a 9x13 inch baking dish.

  5. Pour into the prepared baking dish.

  6. Bake 40 to 50 minutes in the preheated oven, or until lightly brown. Let stand 10 minutes before serving.
