  1. 1 cup 237ml Fresh orange juice

  2. 2 tablespoons 30ml Minced red onion

  3. 2 tablespoons 30ml Fresh lime juice

  4. 1 teaspoon 5ml Dijon mustard

  5. 1 teaspoon 5ml Ancho chile powder

  6. 1 teaspoon 5ml Red wine vinegar

  7. 1/2 cup 118ml Olive oil

  8. Salt - to taste

  9. Freshly ground black pepper - to taste

  1. In a saucepan over high heat, reduce the orange juice until it forms a syrup.

  2. Let the syrup cool slightly.

  3. In a blender, combine the orange syrup, onion, lime juice, mustard, chile powder, and vinegar.

  4. Blend 30 seconds. With the blender running, slowly add the olive oil until the dressing emulsifies.

  5. Season to taste with salt and pepper.

  6. This recipe yields about 3/4 cup of vinaigrette.
