  2. 1 lb 454g / 16oz Onions - grated

  3. 6 Eggs

  4. 1/3 cup 78ml Matzo meal

  5. 1/4 cup 49g / 1.7oz Shortening

  6. 1/2 tablespoon 7 1/2ml Salt

  7. 1 teaspoon 5ml Freshly-ground black pepper

  8. 4 cups 948ml Oil

  1. Peel and grate potatoes; combine with grated onion, beaten eggs, matzo meal, shortening, salt, and pepper. Refrigerate overnight.

  2. Heat oil and fry by tablespoonful on both sides until browned. Drain.

  3. This recipe yields 12 servings.
