  1. 2 tablespoons 30ml Mangos - peel, slice (large)

  2. 2 tablespoons 30ml Lemon juice

  3. 1 cup 237ml Orange juice

  4. 2/3 cup 131g / 4.6oz Sugar - or substitute

  5. 1/3 cup 78ml Tapioca - quick cooking kind

  6. 1/2 tablespoon 7 1/2ml Orange peel - grated

  7. Banana slices - optional

  1. In a blender or food processor, whirl mangos until pureed; you should have 3 cups.

  2. Transfer puree to a 3 qt pan. Stir in lemon juice, orange juice, sugar, and tapioca.

  3. Let stand for 5 minutes.; then bring to a full boil over med-high heat, stirring constantly.

  4. Remove from heat; stir in orange peel.

  5. Let cool for 15 minutes.; cover and refrigerate until softly set (about 2 hrs).

  6. To serve, spoon flummery into 4 - 6 servings.
