  1. 250 gm Chole/chana /Chickpea (boiled or unboiled)

  2. Salt to taste

  3. 2-3 Green chilies-finely chopped

  4. 2-3 Tomatoes finely chopped

  5. 1 piece Ginger finely chopped

  6. 2-3Garlilc cloves finely chopped

  7. 1 Onion finely chopped

  8. 1-2 Cups of water

  9. 1tbsp Tomato paste

  10. 2 pieces Bay leaves

  11. 2 tbsp of Ghee (oil /butter)

  12. Spices:

  13. 1tsp Turmeric powder

  14. 1tsp Fennel seeds

  15. 2-3 pods of green Cardamom

  16. 1tsp dry Coriander powder

  17. 1 tsp Cinnamon powder

  18. 1tsp red Chili powder

  19. 1tbsp salt

  20. 1 tsp Cumin seeds

  21. 3-4 pieces cloves

  22. 1tsp Black Pepper powder

  23. 1tsp Garam masala

  1. First put Chana/ chickpea in water for 5-6 hours to soak the water In pressure cooker take salt at first Put Ghee in the pressure cooker.

  2. Add Cumin seed, Cloves, Bay leaves, Green Cardamom and fry them well.

  3. Add Onions, let it become golden brown. To cook faster add salt.

  4. Add Green Chilies.

  5. Take 2 minutes to make the mixture half fry.

  6. Add Fennel seeds, Turmeric powder, Red Chili powder, mix them well.

  7. Add little Black Pepper.

  8. Add chopped Tomatoes and let them stir and cook till the chana masala gravy is ready.

  9. Add Cinnamon and Coriander powder and pinch of Garam masala (optional).

  10. To make the gravy smooth add Tomato paste and mix well.

  11. Add boiled Chickpeas and stir well.

  12. Add some water to get gravy.

  13. Close the lid of the pressure Cooker.

  14. After few minutes or 2 whistles the special Chana Masala is ready.

  15. Try it with Puri, Roti, naan, Paratha or Rice.
