  1. 1 cup 62g / 2 1/5oz Onions

  2. 2 tablespoons 30ml Olive oil

  3. 1 lb 454g / 16oz Ground round

  4. 1 teaspoon 5ml Seasoned salt

  5. 1 cup 237ml Chopped spinach - squeezed dry

  6. 6 Eggs

  7. 1/4 cup 36g / 1 1/3oz Grated asiago cheese -see note

  8. 1/4 cup 36g / 1 1/3oz Grated parmesan cheese

  1. Saute the onions in olive oil over medium high heat.

  2. Add ground round and season with salt.

  3. Cook until medium well. Break up with fork.

  4. Add spinach and whole eggs and stir and cook until done, but not dry.

  5. Serve on individual plates. Sprinkle with combined cheeses.

  6. * You can substitute Romano cheese if you desire.

  7. Seattle's favorite version of this classic dish. Chef says try a variation using 1 cup mushrooms. Garnish with 1 1/2 tablespoons of sour cream and green onions.
