  2. PRUNE AND ALMOND TART

  6. 5 dl Brewed hot strong black tea - such as Earl Grey (*)

  7. 1 lb Prunes -- pitted

  8. 35 g Whole almonds -- unblanched

  9. 1 Egg -- lightly beaten

  10. 5 tb Granulated sugar

  11. 2 tb Plum eau-de-vie -- or brandy

  12. 1 7/8 dl Heavy cream

  13. 1 Flaky sweet pastry shell

  15. 1 tb Confectioners' sugar

  16. 5 dl hot tea ò cups;

  17. 35 g almonds ñ/

  18. 4 cup;

  19. 1 7/8 dl

  21. 1 tablespoon of loose Earl

  22. 5 dl of water

  23. At least 1 hour before preparing the tart, pour the hot tea over the

  24. prunes. Set aside to marinate.

  25. Preheat the oven to 190 oC (375 oF).

  26. Grind the almonds to a fine powder.

  27. Add the egg, sugar, eau-de-vie and cream. Process until very smooth.

  28. Thoroughly drain the prunes, discarding the soaking liquid. Carefully

  29. 2 layers

  30. filling over the prunes.

  31. Place the tart in the center of the oven, and bake until the filling is set

  32. and the tart shell is nicely browned, about 45 minutes.

  33. Remove from the oven and sprinkle on the confectioners' sugar. Cool on a

  34. rack.

  35. Serve at room temperature.
