  1. Raspberry Chicken

  2. 2 tsp oil

  3. 4 boneless, skinless chicken breast halves

  4. 1/4 c seedless raspberry jam

  5. 2 T orange juice

  6. Heat oil in large nonstick skillet over med. heat until hot. If

  7. desired, season chicken with salt and pepper; add to skillet. Cook

  8. 10 - 12 min. or til chicken is fork tender and juices run clear,

  9. turning once. Add raspberry jam and orange juice. Stir untill

  10. melted. Bring to a boil. Boil 1 - 2 min, or until slightly

  11. thickened. Spoon sauce over chicken.
