  1. 1/2 cup 73g / 2.6oz Dried bread crumbs

  2. 1/2 cup 31g / 1.1oz All-purpose flour

  3. 1 tablespoon 15ml Fresh parsley - chopped

  4. 1 teaspoon 5ml Dried basil

  5. 1/2 teaspoon 2 1/2ml Salt

  6. 1/2 teaspoon 2 1/2ml Paprika

  7. 1/4 teaspoon 1 1/3ml Ground black pepper

  8. 1 Lemon juice of

  9. 2 tablespoons 30ml Butter or margarine - melted

  10. 2 tablespoons 30ml Vegetable oil

  11. 1 Chicken - cut into pieces

  1. Heat oven to 350. Combine bread crumbs, flour, parsley, basil, salt, paprika and pepper in small brown paper bag; seal and shake to mix. Combine lemon juice, butter and oil in large bowl.

  2. Add the chicken, turning the pieces to coat. Working with a few pieces at a time, shake the chicken in crumb mixture in the bag to coat evenly; place the pieces on 15x10x1" baking pan. Bake in 350 oven for 45 minutes or until the chicken meat is no longer pink near the bone. Increase the oven heat to broil. Adjust the oven rack 4-6 inches from the source of heat. Broil chicken until lightly golden, 5-8 minutes.
